Description

A sweet and spicy BBQ chicken quesadilla, perfect for family gatherings or a cozy weeknight dinner.


Ingredients

  • Cooking oil of choice
  • 1 pound boneless, skinless chicken thighs (or chicken breasts)
  • Kosher salt
  • Pepper
  • BBQ seasoning blend
  • 3 tablespoons BBQ sauce (plus more to drizzle in quesadillas)
  • 2 tablespoons hot honey (plus more to drizzle in quesadillas)
  • 4 large burrito size flour tortillas
  • 3 cups shredded cheese of choice
  • 1/2 cup chopped cilantro (optional)

Instructions

  1. Preheat your griddle to medium heat. Pour in a drizzle of cooking oil, then add the chicken, kosher salt, pepper, and your BBQ seasoning blend. Cook for about 6 minutes, mixing occasionally until the chicken is tender and cooked through.
  2. Add the BBQ sauce and hot honey to the pan. Stir together and cook for another 2 minutes to blend the flavors. Remove from the griddle and scrape the surface clean. Lower the heat to medium-low.
  3. Drizzle a little more cooking oil on the griddle and lay each tortilla flat. Sprinkle half the cheese on one side of each tortilla, then pile on the chicken mixture. Drizzle in more BBQ sauce and hot honey, sprinkle with cilantro if using, and top with remaining cheese.
  4. Fold the empty side of each tortilla over the filled side and cook on the griddle for about 1 to 2 minutes per side, until the cheese melts and the tortillas reach your desired crispiness.
  5. Remove them from the griddle, slice up, and serve with a dollop of sour cream and jalapenos on the side if desired.

Notes

You can cook the chicken ahead of time and store it in the fridge for up to 3 days. Use a pizza cutter for perfectly cut quesadillas.
