- 8 oz pasta (fusilli or rotini)
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 red onion, finely chopped
- 1/2 cup bell pepper, diced
- 1/2 cup olives (black or green), sliced
- 1/2 cup mozzarella cheese, cubed
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and rinse with cold water to cool it down and prevent sticking.
- Combine the cooked pasta with cherry tomatoes, diced cucumber, red onion, bell pepper, olives, mozzarella cheese, and fresh parsley in a large bowl.
- Whisk together the olive oil, red wine vinegar, Italian seasoning, salt, and pepper in a small bowl.
- Pour the dressing over the pasta salad and gently toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
