A refreshing and easy summer treat combining sweet watermelon and tart kiwi, perfect for cooling off on warm days.

- 2 cups watermelon, cubed
- 2 cups kiwi, peeled and sliced
- 2 tablespoons honey or agave syrup (optional)
- 1 tablespoon lime juice (optional)
Instructions
- Blend the watermelon in a blender until smooth. If you’d like a sweeter and zesty taste, add honey or agave syrup and lime juice, then blend again until well combined.
- Pour the watermelon puree into popsicle molds, filling them about halfway for a delightful layered look.
- Layer the kiwi slices on top of the refreshing watermelon puree. Place them carefully to create an inviting and colorful display.
- Pour additional watermelon puree to fill the molds if necessary, ensuring that the kiwi slices are just visible through the translucent watermelon.
- Insert popsicle sticks into each mold, allowing the delightful blend of flavors to meld together while freezing.
- Freeze for at least 240-360 minutes or until solid; this time allows for the perfect creamy yet icy texture to form.
- To remove popsicles, run warm water over the outside of the molds for a few seconds until they loosen and you can easily pull them out.
Notes
These popsicles can be stored in the freezer for up to two weeks. Feel free to swap out kiwi for other favorite fruits or adjust the sweetness to your liking.
