Ingredients

- 1 whole head of cabbage, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 6 cups vegetable broth
- 1 can diced tomatoes (14 oz)
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, and celery, and sauté for about 5-7 minutes until softened.
- Add chopped cabbage and sauté for a few more minutes until it starts to wilt.
- Pour in vegetable broth and add diced tomatoes, thyme, basil, salt, and pepper. Stir everything to combine.
- Bring the soup to a boil, then reduce heat and let it simmer for 30 minutes.
- Adjust seasoning if necessary, adding more salt or pepper to taste, and serve hot.
Notes
This soup can be made ahead and stored in the fridge. It also freezes well for up to 3 months.
