Instructions
- Preheat your smoker to 225°F (107°C).
- Trim excess fat from the brisket, ensuring it has a nice, even surface for seasoning.
- Rub a thin layer of mustard over the brisket (if using), then season generously with salt, black pepper, garlic powder, and onion powder.
- Place the brisket in the smoker fat side up.
- Add your choice of wood chips to the smoker and allow them to catch fire.
- Smoke the brisket for about 1.5 hours per pound, until it reaches an internal temperature of 195-205°F (90-96°C).
- Let the brisket rest for at least 30 minutes before slicing and serving.
Notes
For a spicy kick, add cayenne or chipotle powder to the rub. Consider a honey glaze for a sweet finish.
