- 4 medium zucchinis
- 1 pound ground turkey
- 1 can black beans, drained and rinsed
- 1 cup corn
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 packet taco seasoning
- Salt and pepper to taste

Instructions
- Preheat the oven to 375°F (190°C).
- Cut zucchinis in half lengthwise and scoop out the center using a spoon to create boats.
- Heat a drizzle of olive oil over medium heat in a skillet. Add ground turkey and cook until browned.
- Stir in the black beans, corn, taco seasoning, salt, and pepper. Cook for an additional 5 minutes.
- Fill each zucchini boat with the turkey mixture and place in a baking dish.
- Top each boat with shredded cheese.
- Bake in the preheated oven for 25-30 minutes, or until the zucchinis are tender and cheese is melted and bubbly.
