Description

Delightful dessert bars featuring creamy cheesecake and cookie layers, perfect for any occasion.


Ingredients

  • 1 cup butter, softened
  • 1 1/2 cups granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 2 tsp strawberry extract
  • 2 tsp pink food coloring
  • 2 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 block cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 1 tsp strawberry extract
  • 1/2 cup granulated sugar

Instructions

  1. Prep the filling: In a medium bowl, mix the softened cream cheese, powdered sugar, 1/2 tsp vanilla extract, and 1 tsp strawberry extract until creamy. Set aside.
  2. Cream butter & sugar: In a large bowl, cream together the softened butter and 1 1/2 cups of granulated sugar until light and fluffy, about 3-5 minutes.
  3. Add dry ingredients: Gradually mix in the egg, 1 tsp vanilla extract, 2 tsp strawberry extract, and 2 tsp pink food coloring until well combined. In a separate bowl, whisk together the flour, baking soda, and baking powder, then add this mixture to the butter mixture. Stir until just combined.
  4. Assemble the bars: Preheat your oven to 350°F (175°C). Line a 9×13 inch baking dish with parchment paper. Press about two-thirds of the cookie dough mixture into the bottom of the prepared dish. Spread the cream cheese filling evenly over the top, then dollop the remaining cookie dough on top of the cream cheese, spreading it gently.
  5. Bake: Place the assembled baking dish in the preheated oven and bake for 25-30 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean. Remove from the oven and let it cool in the pan.
  6. Chill & cut: Once the bars are cool to the touch, place them in the refrigerator for at least an hour to set properly. Once chilled, cut them into squares.
  7. Serve & store: Enjoy them chilled or at room temperature, and store leftovers in an airtight container in the fridge for up to five days.

Notes

You can prepare the cookie dough and cream cheese filling a day in advance for quicker baking.
