- 9 oz cheese tortellini
- 2 cups fresh spinach
- 1 cup cherry tomatoes, halved
- 1 lb ground meat (beef or turkey)
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Cook the tortellini according to package instructions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
- Add ground meat to the skillet, cooking until browned. Season with a pinch of salt and pepper.
- Stir in the cherry tomatoes and cook until softened.
- Add heavy cream and let it simmer for a few minutes, thickening beautifully.
- Stir in the cooked tortellini and fresh spinach, mixing until the spinach wilts and the tortellini gets coated in creamy goodness.
- Add Parmesan cheese, stirring until melted and the sauce becomes creamy.
- Garnish with fresh basil before serving.
