A delightful artisan bread infused with spicy jalapeños and rich cheddar cheese, perfect for any occasion.
Ingredients

- 1 cup water (240g)
- 1/2 cup sourdough starter (120g)
- 1 1/2 tsp salt (11g)
- 3 cups flour (425g)
- 1 cup jalapeños, chopped
- 1 cup sharp cheddar cheese, shredded
Instructions
- Mix the water and sourdough starter until well combined.
- Add the flour and salt, mixing them into a shaggy dough.
- Cover the bowl with a kitchen towel and let it rest for 30 minutes.
- Perform 3 sets of stretch and folds every 30 minutes.
- Add 1/4 of the chopped jalapeños and cheddar during the last stretch and fold.
- Cover the dough and let it rise for 4-5 hours at room temperature.
- Turn the dough onto a floured surface and shape it into a tight ball.
- Line your banneton basket with a towel and place the dough seam side up.
- Cover and refrigerate for at least 4 hours or up to a week.
- Preheat the oven to 450°F (232°C) with a Dutch oven inside.
- Remove the hot Dutch oven and place the dough inside.
- Bake covered for 20 minutes, then uncovered for an additional 15 minutes.
- Allow the bread to cool completely before slicing.
Notes
For a smokier flavor, consider adding smoked paprika or chipotle powder.
