Description

A delightful artisan bread infused with spicy jalapeños and rich cheddar cheese, perfect for any occasion.


Ingredients

Scale
  • 1 cup water (240g)
  • 1/2 cup sourdough starter (120g)
  • 1 1/2 tsp salt (11g)
  • 3 cups flour (425g)
  • 1 cup jalapeños, chopped
  • 1 cup sharp cheddar cheese, shredded

Instructions

  1. Mix the water and sourdough starter until well combined.
  2. Add the flour and salt, mixing them into a shaggy dough.
  3. Cover the bowl with a kitchen towel and let it rest for 30 minutes.
  4. Perform 3 sets of stretch and folds every 30 minutes.
  5. Add 1/4 of the chopped jalapeños and cheddar during the last stretch and fold.
  6. Cover the dough and let it rise for 4-5 hours at room temperature.
  7. Turn the dough onto a floured surface and shape it into a tight ball.
  8. Line your banneton basket with a towel and place the dough seam side up.
  9. Cover and refrigerate for at least 4 hours or up to a week.
  10. Preheat the oven to 450°F (232°C) with a Dutch oven inside.
  11. Remove the hot Dutch oven and place the dough inside.
  12. Bake covered for 20 minutes, then uncovered for an additional 15 minutes.
  13. Allow the bread to cool completely before slicing.

Notes

For a smokier flavor, consider adding smoked paprika or chipotle powder.
