Description

Delightful soft cookies bursting with the sweet flavor of ripe strawberries and creamy cheesecake.


Ingredients

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon salt
  • 1/2 cup softened cream cheese
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup pureed fresh strawberries (about 45 medium strawberries)
  • 1/2 cup chopped fresh strawberries (for added texture)
  • Optional: powdered sugar for dusting or drizzling

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix the flour, baking powder, baking soda, and salt in a medium bowl until well combined.
  3. Combine the cream cheese and butter in a large bowl until light and fluffy, about 2-3 minutes.
  4. Add the granulated sugar, vanilla extract, and strawberry puree until evenly combined.
  5. Combine the dry ingredients with the cream cheese mixture until just incorporated, and fold in the chopped strawberries gently.
  6. Scoop rounded tablespoons of dough onto the prepared baking sheet, leaving space for spreading, and bake for 10-12 minutes or until lightly golden.
  7. Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack.
  8. Dust with powdered sugar or drizzle extra strawberry puree for presentation.

Notes

Make the dough ahead and store it in the refrigerator for up to 3 days. Feel free to customize with lemon zest or chocolate chips.
