- 2 pounds boneless, skinless chicken breasts, sliced into thin strips
- 3 large bell peppers, sliced (any color you like!)
- 1 large onion or 2 small onions, sliced
- 15 ounces diced tomatoes or salsa
- 1/3 cup fajita seasoning
- Salt & pepper to season the chicken
- 3/4 cup low-sodium chicken broth (for Instant Pot only)
Instructions
- Season the chicken with salt and pepper to enhance its flavor.
- Add the seasoned chicken and all the other fresh ingredients into the slow cooker. Stir gently to mix everything.
- Cover and cook on HIGH for 2-3 hours or LOW for 4-6 hours until the chicken is cooked through and tender.
- If using the Instant Pot, add the chicken broth before sealing the lid and cooking on high pressure for about 10 minutes.
- Shred the chicken gently with a fork and stir everything together one last time.
Notes
Customize the heat levels by adding jalapeños or cayenne pepper, and consider making it ahead for convenience.
