Description

A warm and cozy recipe for Slow Cooker Chicken Fajitas, perfect for family dinners with vibrant flavors and customizable ingredients.


Ingredients

  • 2 pounds boneless, skinless chicken breasts, sliced into thin strips
  • 3 large bell peppers, sliced (any color you like!)
  • 1 large onion or 2 small onions, sliced
  • 15 ounces diced tomatoes or salsa
  • 1/3 cup fajita seasoning
  • Salt & pepper to season the chicken
  • 3/4 cup low-sodium chicken broth (for Instant Pot only)

Instructions

  1. Season the chicken with salt and pepper to enhance its flavor.
  2. Add the seasoned chicken and all the other fresh ingredients into the slow cooker. Stir gently to mix everything.
  3. Cover and cook on HIGH for 2-3 hours or LOW for 4-6 hours until the chicken is cooked through and tender.
  4. If using the Instant Pot, add the chicken broth before sealing the lid and cooking on high pressure for about 10 minutes.
  5. Shred the chicken gently with a fork and stir everything together one last time.

Notes

Customize the heat levels by adding jalapeños or cayenne pepper, and consider making it ahead for convenience.
