- 4 medium zucchinis
- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced

- 1 teaspoon Italian seasoning

Instructions
- Preheat your oven to 375°F (190°C).
- Cut the zucchinis in half lengthwise and scoop out the centers to create boats.
- Heat a drizzle of olive oil over medium heat and sauté the chopped onion and minced garlic until softened.
- Add the ground beef to the skillet and cook until browned.
- Stir in the diced tomatoes and Italian seasoning, then season with salt and pepper to taste.
- Fill the hollowed zucchini boats with the beef mixture and place in a baking dish.
- Sprinkle shredded cheese on top if desired.
- Bake for about 25-30 minutes until the zucchinis are tender and the cheese is melted.
