Description

Savory stuffed zucchini boats filled with a rich ground beef mixture, perfect for a comforting family meal.


Ingredients

  • 4 medium zucchinis
  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)
  • Olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out the centers to create boats.
  3. Heat a drizzle of olive oil over medium heat and sauté the chopped onion and minced garlic until softened.
  4. Add the ground beef to the skillet and cook until browned.
  5. Stir in the diced tomatoes and Italian seasoning, then season with salt and pepper to taste.
  6. Fill the hollowed zucchini boats with the beef mixture and place in a baking dish.
  7. Sprinkle shredded cheese on top if desired.
  8. Bake for about 25-30 minutes until the zucchinis are tender and the cheese is melted.
  9. Serve warm and enjoy!
