- 1 lb sausage
- 2 sweet potatoes, diced
- 4 cups kale, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the diced onion and minced garlic, and sauté until the onion is translucent.
- Add the sausage, breaking it apart, and cook until browned.
- Stir in the sweet potatoes and let them soak up the flavors for about 5 minutes.
- Pour in the broth and bring to a boil.
- Reduce the heat and let it simmer for about 15 minutes until the sweet potatoes are tender.
- Add the kale and cook for another 5 minutes, until it’s vibrant and wilted.
- Season with salt and pepper to taste, then serve hot.
