Description

A creamy and aromatic compound butter infused with roasted garlic and fresh rosemary, perfect for spreading or cooking.


Ingredients

  • 1 garlic bulb
  • 1 teaspoon olive oil
  • 1 cup unsalted butter (2 sticks), room temperature
  • 3 tablespoons parsley, finely chopped
  • 1 tablespoon rosemary, finely chopped
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon lemon juice
  • 3 garlic cloves, roasted

Instructions

  1. Roast the garlic: Preheat your oven to 400°F. Remove the excess papery layers from the garlic bulb, cut off about 1/4 inch from the top, drizzle with olive oil, wrap in foil, and bake for 40 minutes. Let it cool.
  2. Combine the ingredients: Once cool, squeeze the roasted cloves into a mixing bowl. Add the room temperature butter, parsley, rosemary, salt, pepper, lemon juice, and garlic cloves.
  3. Mix together: Use a fork to smash everything together until it’s consistent and creamy.
  4. Shape the butter: Place the mixture onto parchment paper and form into a tube or rectangular shape.
  5. Chill and set: Lay the butter log in the refrigerator and chill for at least 60 minutes.
  6. Serve and enjoy: Once solid, unwrap and spread generously on warm bread, pasta, steaks, or as desired.

Notes

This compound butter can be made ahead and stored in the refrigerator. Use a warm knife for easy slicing.
