- 1 garlic bulb
- 1 teaspoon olive oil
- 1 cup unsalted butter (2 sticks), room temperature
- 3 tablespoons parsley, finely chopped
- 1 tablespoon rosemary, finely chopped
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 tablespoon lemon juice
- 3 garlic cloves, roasted
Instructions
- Roast the garlic: Preheat your oven to 400°F. Remove the excess papery layers from the garlic bulb, cut off about 1/4 inch from the top, drizzle with olive oil, wrap in foil, and bake for 40 minutes. Let it cool.
- Combine the ingredients: Once cool, squeeze the roasted cloves into a mixing bowl. Add the room temperature butter, parsley, rosemary, salt, pepper, lemon juice, and garlic cloves.
- Mix together: Use a fork to smash everything together until it’s consistent and creamy.
- Shape the butter: Place the mixture onto parchment paper and form into a tube or rectangular shape.
- Chill and set: Lay the butter log in the refrigerator and chill for at least 60 minutes.
- Serve and enjoy: Once solid, unwrap and spread generously on warm bread, pasta, steaks, or as desired.
Notes
This compound butter can be made ahead and stored in the refrigerator. Use a warm knife for easy slicing.
