Description

A comforting dish of rice and beans with kielbasa, perfect for busy weeknight dinners.


Ingredients

  • 1 cup rice
  • 1 can black beans, drained and rinsed
  • 1 lb kielbasa, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 bell pepper, chopped
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Heat a drizzle of olive oil in a large skillet over medium heat.
  2. Add the chopped onion and bell pepper, sautéing until soft and fragrant, about 5 minutes.
  3. Stir in the minced garlic and sliced kielbasa; cook for another 2-3 minutes until the kielbasa starts to brown.
  4. Add the rice, drained black beans, chicken broth, cumin, paprika, salt, and pepper. Stir well to combine.
  5. Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for about 20-25 minutes, or until the rice is tender and the liquid is absorbed.
  6. Fluff the rice with a fork and serve hot.

Notes

This dish is great for meal prep and can be stored in the refrigerator for up to 4 days. Reheat gently on the stove with a splash of chicken broth.
