Crisp on the outside and fluffy on the inside, these Parmesan Roasted Red Potatoes are bursting with flavor from freshly grated Parmesan and aromatic Italian herbs.

- 2 pounds red potatoes
- 3 tablespoons olive oil
- 1.5 cups grated Parmesan cheese (freshly grated)
- 1 teaspoon garlic powder
- 1 teaspoon dried Italian herbs (or a mix of basil, oregano, and thyme)
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
Instructions
- Preheat the oven to 400°F (200°C).
- Rinse and scrub the red potatoes under cold water until clean, then slice them into quarters.
- Drizzle the olive oil over the potatoes and sprinkle with garlic powder, dried Italian herbs, salt, and pepper. Toss to coat.
- Add the grated Parmesan cheese to the potatoes and toss until fully coated.
- Line a baking sheet with parchment paper and spread the potatoes in a single layer.
- Roast for 30-35 minutes, tossing halfway through until golden and crispy.
- Remove from the oven and let cool for a couple of minutes before serving warm.
Notes
Make ahead by prepping the potatoes a day in advance and storing them in the fridge. Reheat in the oven to retain crispiness.
