Description

Crisp on the outside and fluffy on the inside, these Parmesan Roasted Red Potatoes are bursting with flavor from freshly grated Parmesan and aromatic Italian herbs.


Ingredients

  • 2 pounds red potatoes
  • 3 tablespoons olive oil
  • 1.5 cups grated Parmesan cheese (freshly grated)
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian herbs (or a mix of basil, oregano, and thyme)
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Rinse and scrub the red potatoes under cold water until clean, then slice them into quarters.
  3. Drizzle the olive oil over the potatoes and sprinkle with garlic powder, dried Italian herbs, salt, and pepper. Toss to coat.
  4. Add the grated Parmesan cheese to the potatoes and toss until fully coated.
  5. Line a baking sheet with parchment paper and spread the potatoes in a single layer.
  6. Roast for 30-35 minutes, tossing halfway through until golden and crispy.
  7. Remove from the oven and let cool for a couple of minutes before serving warm.

Notes

Make ahead by prepping the potatoes a day in advance and storing them in the fridge. Reheat in the oven to retain crispiness.
