Description

A delightful Orzo Salad, light and refreshing, perfect for summer days or easy weeknight dinners.


Ingredients

  • 1 cup orzo pasta
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Begin by cooking the orzo pasta according to the package directions. Once cooked, drain it well and let it cool to room temperature.
  2. In a large mixing bowl, combine the cooled orzo with the cherry tomatoes, diced cucumber, bell pepper, red onion, parsley, and crumbled feta cheese.
  3. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  4. Pour the dressing over the salad and gently toss to combine.
