- 1 cup lentils
- 2 carrots, diced
- 1/4 cup mixed herbs (parsley, cilantro, mint)
- 1/2 cup nuts (almonds, walnuts, or your choice)
- 1/2 cup olives, pitted and sliced
- 1/4 cup raisins
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Start by rinsing the lentils under cold water to remove any debris or impurities.
- In a pot, cook the rinsed lentils in boiling water until they become tender, which takes about 20-25 minutes.
- Once they are ready, drain them and let them cool in a colander. You can even run some cold water over them to speed up the cooling process.
- In a large bowl, combine the cooled lentils, diced carrots, mixed herbs, nuts, olives, and raisins.
- In a separate bowl, whisk together the olive oil, lemon juice, cumin, paprika, salt, and pepper until well-combined.
- Pour the dressing over the salad and toss gently to ensure everything is beautifully coated.
- Serve immediately for a fresh crunch or let it chill in the refrigerator for about 30 minutes to enhance the flavors.
Notes
This salad tastes even better the next day as the flavors meld together. Store in an airtight container in the refrigerator for up to 3 days.
