Description

A creamy, cheesy delight combining tender chicken with a vibrant corn mixture inspired by Mexican street corn, perfect for cozy family dinners.


Ingredients

  • 1 lb chicken breasts
  • 1 cup corn (canned or frozen)
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 cup shredded cheese (like cheddar or Mexican blend)
  • 2 tsp chili powder
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the corn, mayonnaise, sour cream, shredded cheese, chili powder, garlic powder, salt, and pepper in a large mixing bowl.
  3. Place the chicken breasts in a casserole dish and spread the corn mixture over the top.
  4. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  5. Garnish with fresh cilantro, if desired, and serve.
