Instructions
- Sauté the vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onions and bell peppers, stirring until they become tender and fragrant, about 4-5 minutes.
- Cook the beef: Push the veggies to the side of the skillet and add the ground beef. Season with salt and pepper and cook until browned, breaking it up with a spatula, approximately 5-7 minutes.
- Add the chiles: Stir in the roasted chiles, combining everything in the skillet. Allow the mixture to cook together for an additional 3-4 minutes.
- Melt the cheese: Sprinkle the shredded cheese generously on top of the beef and veggie mixture. Cover the skillet and let it cook for an extra 2-3 minutes until the cheese melts.
- Assemble the sandwich: Toast the slices of bread lightly, then spoon the cheesy mixture over two slices. Top with any optional toppings and place the remaining bread on top.
- Serve and enjoy: Cut the sandwiches in half and serve warm.
