Ingredients

  • 1 medium onion, diced
  • 1 cup bell peppers, diced
  • 1 cup roasted chiles, chopped
  • 1 pound ground beef
  • 1 cup shredded cheese
  • 4 slices of crusty bread
  • Salt and pepper to taste
  • Optional toppings: fresh cilantro, avocado slices, or sour cream

Instructions

  1. Sauté the vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onions and bell peppers, stirring until they become tender and fragrant, about 4-5 minutes.
  2. Cook the beef: Push the veggies to the side of the skillet and add the ground beef. Season with salt and pepper and cook until browned, breaking it up with a spatula, approximately 5-7 minutes.
  3. Add the chiles: Stir in the roasted chiles, combining everything in the skillet. Allow the mixture to cook together for an additional 3-4 minutes.
  4. Melt the cheese: Sprinkle the shredded cheese generously on top of the beef and veggie mixture. Cover the skillet and let it cook for an extra 2-3 minutes until the cheese melts.
  5. Assemble the sandwich: Toast the slices of bread lightly, then spoon the cheesy mixture over two slices. Top with any optional toppings and place the remaining bread on top.
  6. Serve and enjoy: Cut the sandwiches in half and serve warm.
