Description

A warm, creamy casserole that combines red potatoes, cheese, and turkey bacon, creating a heartwarming comfort food classic.

Ingredients

Scale
  • 2 lbs red potatoes
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled turkey bacon
  • 1/4 cup green onions, chopped
  • 1/4 cup butter, melted
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Wash and cube the red potatoes. Boil them in a pot of salted water until fork-tender. Drain and let them cool slightly.
  3. In a large mixing bowl, combine the sour cream, half of the cheddar cheese, cooked turkey bacon, green onions, melted butter, salt, and pepper. Stir in the boiled potatoes until they are well coated in that creamy mixture.
  4. Transfer the potato mixture into a greased baking dish, filling it generously.
  5. Top with the remaining cheddar cheese, creating that irresistible, gooey layer on top.
  6. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
  7. Serve warm, and enjoy every comforting bite!

Notes

Prepare the casserole up to a day in advance and refrigerate. Allow it to come to room temperature before baking.
