- 4 cups mashed potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup milk
- 6 slices turkey bacon, cooked and crumbled
- 2 green onions, chopped
- Salt and pepper to taste
- 1/2 cup shredded mozzarella cheese (for topping)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix the mashed potatoes with cheddar cheese, sour cream, milk, half of the crumbled turkey bacon, and green onions. Season with salt and pepper.
- Spread the mixture into a greased casserole dish, smoothing it out for an even bake.
- Top with mozzarella cheese and sprinkle the remaining turkey bacon over the top.
- Bake for 25-30 minutes or until heated through and the cheese is bubbly and golden at the edges.
- Serve warm and enjoy the coziness!

You can prepare the casserole a day in advance. Just refrigerate it unbaked and pop it into the oven when you’re ready to serve.
