Description

Ingredients

  • 2 cups vegetable broth or water
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 lemon (juice and zest)
  • 2 tablespoons olive oil
  • 1 cup fresh parsley, chopped
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water to remove any bitterness. In a medium saucepan, combine the rinsed quinoa and vegetable broth or water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until the quinoa is fluffy and the liquid is absorbed.
  2. Mix the cooked quinoa, chickpeas, lemon juice, lemon zest, olive oil, chopped parsley, garlic powder, salt, and pepper in a large bowl. Toss until everything is well combined.
  3. Serve warm or at room temperature. This dish shines as a side or can be enjoyed as a light main course on its own.
