Instructions
- Rinse the quinoa under cold water to remove any bitterness. In a medium saucepan, combine the rinsed quinoa and vegetable broth or water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until the quinoa is fluffy and the liquid is absorbed.
- Mix the cooked quinoa, chickpeas, lemon juice, lemon zest, olive oil, chopped parsley, garlic powder, salt, and pepper in a large bowl. Toss until everything is well combined.
