Ingredients

  • 1 pound fresh shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 cups fresh spinach
  • Zest and juice of 1 lemon
  • Salt and pepper to taste
  • 1/4 teaspoon red pepper flakes (optional)
  • Grated Parmesan cheese for serving (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add orzo pasta and cook according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Once hot, add minced garlic, stirring until fragrant—about 30 seconds. Be careful not to let it burn.
  3. Add the fresh shrimp to the skillet, season with salt, pepper, and red pepper flakes (if using). Cook for about 2-3 minutes per side until the shrimp turn pink and are cooked through. Remove and set aside.
  4. In the same skillet, add fresh spinach, lemon juice, and zest. Cook for 1-2 minutes, stirring until the spinach wilts and softens.
  5. Combine the cooked orzo with the spinach mixture, tossing everything gently together. Then, add the shrimp back into the skillet, mixing well to incorporate flavors.
  6. Serve warm, topped with grated Parmesan cheese and fresh parsley for an extra hint of brightness.
