- 1 pound fresh shrimp, peeled and deveined
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 2 cups fresh spinach
- Zest and juice of 1 lemon

- 1/4 teaspoon red pepper flakes (optional)
- Grated Parmesan cheese for serving (optional)

Instructions
- Bring a large pot of salted water to a boil. Add orzo pasta and cook according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Once hot, add minced garlic, stirring until fragrant—about 30 seconds. Be careful not to let it burn.
- Add the fresh shrimp to the skillet, season with salt, pepper, and red pepper flakes (if using). Cook for about 2-3 minutes per side until the shrimp turn pink and are cooked through. Remove and set aside.
- In the same skillet, add fresh spinach, lemon juice, and zest. Cook for 1-2 minutes, stirring until the spinach wilts and softens.
- Combine the cooked orzo with the spinach mixture, tossing everything gently together. Then, add the shrimp back into the skillet, mixing well to incorporate flavors.
- Serve warm, topped with grated Parmesan cheese and fresh parsley for an extra hint of brightness.
