Description

Ingredients

  • ¾ cup (6 oz or 170 g) block-style cream cheese (cold)
  • 3 Tablespoons (38 g) granulated white sugar
  • ½ Tablespoon lemon zest
  • 2 cups + 2 Tablespoons (265 g) all-purpose flour
  • ¾ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup (200 g) granulated sugar
  • 2 Tablespoons freshly grated lemon zest
  • ½ cup (113 g) unsalted butter (melted and slightly cooled)
  • 1 large egg (room temperature)
  • 1 large egg yolk (room temperature)
  • 2 Tablespoons freshly squeezed lemon juice
  • ½ teaspoon vanilla extract
  • Additional granulated sugar for rolling cookies

Instructions

  1. Prepare the Cheesecake Filling: In a mixing bowl, beat the cold cream cheese with 3 tablespoons of sugar and ½ tablespoon of lemon zest until smooth and creamy. Chill in the refrigerator while you prepare the cookies.
  2. Mix the Dry Ingredients: In a large bowl, whisk together 2 cups + 2 tablespoons of all-purpose flour, baking soda, and salt. Set aside.
  3. Combine Wet Ingredients: In another bowl, mix 1 cup of granulated sugar, 2 tablespoons of freshly grated lemon zest, melted butter, egg, egg yolk, freshly squeezed lemon juice, and vanilla extract. Whisk until well combined.
  4. Incorporate Dry Ingredients: Gradually add the dry mixture to the wet mixture, stirring until just combined. Be careful not to over-mix!
  5. Form the Cookies: Preheat your oven to 350°F (175°C). Using a cookie scoop or your hands, take about a tablespoon of cookie dough, flatten it slightly in your palm, and place a small dollop of the chilled cheesecake filling in the center. Wrap the dough around the filling to completely encase it, and roll it into a ball.
  6. Sugar Coat and Bake: Roll each cookie ball in granulated sugar and place them onto a lined baking sheet, spacing them apart. Bake for 10–12 minutes, or until the edges are golden. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Chill the cheesecake filling for smoother filling in cookies. Store baked cookies in an airtight container at room temperature for up to a week.
