- 1 bag frozen diced hash brown potatoes, thawed
- 1 can cream of chicken soup (or cream of mushroom)
- 1 cup sour cream
- 2 cups shredded cheddar cheese (divided)
- ½ cup chopped green onions (or sautéed white onion)
- ½ teaspoon garlic powder
- ½ teaspoon black pepper
- ½ teaspoon paprika
- 2 tablespoons butter (melted)
- 1 cup crushed cornflakes or Ritz crackers (optional, for topping)
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Combine the cream of chicken soup, sour cream, 1 ½ cups cheddar cheese, green onions, garlic powder, black pepper, and paprika in a large bowl.
- Stir in the thawed hash brown potatoes until well coated.
- Fold in the sliced kielbasa sausage until evenly distributed.
- Spread the mixture into the greased baking dish and level the top.
- Sprinkle the remaining cheddar cheese on top.
- Mix the melted butter with crushed cornflakes or Ritz crackers, if using, and scatter over the casserole.
- Bake uncovered for 40–45 minutes until bubbly and golden brown.
- Let it rest for 5 minutes before serving.
