This comforting Kielbasa Sausage Cheesy Potato Casserole combines smoky kielbasa, creamy cheese, and tender potatoes, making it perfect for weeknight dinners or gatherings.

  • 1 lb smoked kielbasa sausage, sliced into ½-inch pieces
  • 1 bag frozen diced hash brown potatoes, thawed
  • 1 can cream of chicken soup (or cream of mushroom)
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese (divided)
  • ½ cup chopped green onions (or sautéed white onion)
  • ½ teaspoon garlic powder
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • 2 tablespoons butter (melted)
  • 1 cup crushed cornflakes or Ritz crackers (optional, for topping)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Combine the cream of chicken soup, sour cream, 1 ½ cups cheddar cheese, green onions, garlic powder, black pepper, and paprika in a large bowl.
  3. Stir in the thawed hash brown potatoes until well coated.
  4. Fold in the sliced kielbasa sausage until evenly distributed.
  5. Spread the mixture into the greased baking dish and level the top.
  6. Sprinkle the remaining cheddar cheese on top.
  7. Mix the melted butter with crushed cornflakes or Ritz crackers, if using, and scatter over the casserole.
  8. Bake uncovered for 40–45 minutes until bubbly and golden brown.
