Description

Delightfully zesty key lime cookies with a tender crumb and refreshing flavor, perfect for family gatherings or cozy evenings.


Ingredients

  • ½ cup unsalted butter, softened to room temperature
  • 1 large egg
  • ¾ cup granulated sugar
  • ¼ cup light brown sugar
  • 1 teaspoon vanilla extract
  • 23 teaspoons key lime zest
  • 1¾ cups all-purpose flour (219g)
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup powdered sugar (for icing)
  • 1 tablespoon key lime juice
  • 1 tablespoon milk
  • ¼ teaspoon vanilla (for icing)
  • Pinch of salt (optional)
  • ½ teaspoon key lime zest (for icing)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix together the softened unsalted butter, granulated sugar, and light brown sugar using an electric mixer until light and fluffy, about 2-3 minutes.
  3. Add in the large egg and vanilla extract until well combined.
  4. Zest in the key lime zest.
  5. Combine the flour, baking soda, and salt in a separate bowl. Gradually add this mixture to the wet ingredients until just combined.
  6. Scoop rounded balls of dough onto a lined baking sheet, leaving space in between. Bake for 8-10 minutes.
  7. Cool on the baking sheet for about 5 minutes before transferring to a wire rack.
  8. Make the icing by whisking powdered sugar, key lime juice, milk, vanilla, and a pinch of salt, if desired, then drizzle over the cooled cookies and add extra zest.

Notes

You can prepare the dough in advance and refrigerate it for up to 3 days. Keep cookies in an airtight container at room temperature for up to a week or freeze for later.
