- ½ cup unsalted butter, softened to room temperature
- 1 large egg
- ¾ cup granulated sugar
- ¼ cup light brown sugar
- 1 teaspoon vanilla extract
- 2–3 teaspoons key lime zest
- 1¾ cups all-purpose flour (219g)
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 cup powdered sugar (for icing)
- 1 tablespoon key lime juice
- 1 tablespoon milk
- ¼ teaspoon vanilla (for icing)
- Pinch of salt (optional)
- ½ teaspoon key lime zest (for icing)
Instructions
- Preheat your oven to 350°F (175°C).
- Mix together the softened unsalted butter, granulated sugar, and light brown sugar using an electric mixer until light and fluffy, about 2-3 minutes.
- Add in the large egg and vanilla extract until well combined.
- Zest in the key lime zest.
- Combine the flour, baking soda, and salt in a separate bowl. Gradually add this mixture to the wet ingredients until just combined.
- Scoop rounded balls of dough onto a lined baking sheet, leaving space in between. Bake for 8-10 minutes.
- Cool on the baking sheet for about 5 minutes before transferring to a wire rack.
- Make the icing by whisking powdered sugar, key lime juice, milk, vanilla, and a pinch of salt, if desired, then drizzle over the cooled cookies and add extra zest.
Notes
You can prepare the dough in advance and refrigerate it for up to 3 days. Keep cookies in an airtight container at room temperature for up to a week or freeze for later.
