Description

A heartwarming dish featuring tender zucchini filled with creamy chicken and cheese, perfect for a cozy weeknight dinner.


Ingredients

Scale
  • 1 lb ground chicken
  • 3 large zucchinis (or 4 small)
  • 2 cups marinara or pasta sauce
  • 3 cups freshly shredded mozzarella
  • 1 cup shredded parmesan
  • Salt, pepper, and garlic powder to taste

Instructions

  1. Cook the ground chicken in a large skillet over medium heat until no longer pink, seasoning to taste with salt, pepper, and garlic powder.
  2. Mix in about 2 cups of marinara or pasta sauce with the chicken, then let it simmer on low for 5–10 minutes until thick.
  3. Preheat your oven to 400°F and grease a 9×13 baking dish.
  4. Cut the zucchinis in half lengthwise and scoop out the insides with a spoon.
  5. Stir 2 cups of shredded mozzarella and 1/2 cup of parmesan into the chicken mixture until melted.
  6. Spoon the filling into each zucchini boat and sprinkle remaining cheese on top.
  7. Bake uncovered for 25 minutes, then broil for a few minutes for a golden finish.

Notes

Zucchini ‘guts’ can be used in soups or stir-fries. Make the filling ahead of time for a hassle-free meal.
