- 1 lb ground chicken
- 3 large zucchinis (or 4 small)
- 2 cups marinara or pasta sauce
- 3 cups freshly shredded mozzarella
- 1 cup shredded parmesan
- Salt, pepper, and garlic powder to taste
Instructions
- Cook the ground chicken in a large skillet over medium heat until no longer pink, seasoning to taste with salt, pepper, and garlic powder.
- Mix in about 2 cups of marinara or pasta sauce with the chicken, then let it simmer on low for 5–10 minutes until thick.
- Preheat your oven to 400°F and grease a 9×13 baking dish.
- Cut the zucchinis in half lengthwise and scoop out the insides with a spoon.
- Stir 2 cups of shredded mozzarella and 1/2 cup of parmesan into the chicken mixture until melted.
- Spoon the filling into each zucchini boat and sprinkle remaining cheese on top.
- Bake uncovered for 25 minutes, then broil for a few minutes for a golden finish.
Notes
Zucchini ‘guts’ can be used in soups or stir-fries. Make the filling ahead of time for a hassle-free meal.
