Description

This comforting dish combines high protein chicken breast with creamy Cajun spices and rice, creating a warm embrace for your taste buds.


Ingredients

Scale
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Oregano
  • 1 tsp Thyme
  • 1 tsp Paprika
  • 1 tsp Chilli Powder
  • 800 g Chicken Breast (cut into halves)
  • 1.5 tsp Cajun Seasoning Mix
  • 2 tsp Olive Oil
  • 25 g Grass Fed Butter for Cooking
  • 1 Medium Red Onion (chopped)
  • 45 Garlic Cloves (chopped)
  • 15 g Grass Fed Butter
  • 250 ml Milk
  • 150 g Light Cream Cheese
  • 40 g Parmesan
  • Fresh Parsley (for garnish)

Instructions

  1. Marinate the chicken breast pieces overnight with the Cajun Seasoning Mix and olive oil.
  2. Heat a pan over medium-high heat and melt the 25 g of grass-fed butter.
  3. Cook the marinated chicken until it develops a crispy, golden crust.
  4. In the same pan, sauté the chopped red onion and garlic cloves until fragrant.
  5. Add the remaining Cajun Seasoning Mix and toss in your day-old rice.
  6. Lower the heat and melt the extra 15 g of butter in the pan.
  7. Whisk in the milk, then add in the light cream cheese and Parmesan.
  8. Layer the Cajun rice on a plate, top with the sliced chicken, and drizzle the creamy sauce over everything.
  9. Garnish with fresh parsley for a delightful pop of color and flavor.

Notes

Store leftovers in an airtight container for up to 3 days. Feel free to customize with extra veggies or spices based on your preference.
