Description

A vibrant and flavorful bowl filled with grilled shrimp, fresh avocado, zesty corn salsa, and a creamy sauce, perfect for busy weeknight dinners or gatherings.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 avocados, diced
  • 1 cup corn, cooked (fresh or canned)
  • 1/2 red onion, diced
  • 1 red bell pepper, diced
  • 1/4 cup cilantro, chopped
  • Juice of 2 limes
  • 1/4 cup mayonnaise
  • 1 tablespoon sour cream
  • Salt and pepper to taste
  • Olive oil for grilling
  • Cooked rice or quinoa (for serving)

Instructions

  1. Preheat the grill to medium-high heat. In a bowl, marinate the shrimp with olive oil, lime juice, salt, and pepper, allowing them to soak in the flavors.
  2. Grill the shrimp for about 2-3 minutes on each side until they are beautifully cooked through and have those lovely grill marks.
  3. Combine diced avocados, corn, red onion, red bell pepper, cilantro, lime juice, salt, and pepper in a bowl to create the refreshing corn salsa.
  4. Mix mayonnaise and sour cream together for the creamy sauce.
  5. Serve the grilled shrimp over a bed of rice or quinoa, generously topped with corn salsa and a drizzle of the creamy sauce.
