Description

Ingredients

  • 1 bell pepper, sliced
  • 1 red onion, sliced
  • 1 cup mushrooms, sliced
  • 2 tablespoons olive oil

  • 4 whole wheat wraps or tortillas
  • 1 cup mixed greens
  • 1/2 cup hummus or tzatziki for the herb sauce
  • 1 tablespoon fresh herbs (like parsley or basil), chopped

Instructions

  1. Preheat the grill to medium-high heat, letting it get nice and hot.
  2. Toss the sliced zucchini, bell pepper, red onion, and mushrooms with olive oil, salt, and pepper until evenly coated.
  3. Place the vegetables on the grill and cook for about 5-7 minutes, or until they are tender and lightly charred.
  4. Spread a generous layer of hummus or tzatziki on each wrap.
  5. Layer the grilled vegetables and mixed greens on each wrap.
  6. Sprinkle the chopped fresh herbs on top.
