A creamy and vibrant Green Goddess Pesto Pasta, perfect for a cozy weeknight dinner.
Ingredients

- 8 oz pasta of choice
- 1 cup fresh basil leaves
- 1/2 cup fresh parsley leaves
- 1/4 cup pine nuts
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic
- 1/2 cup olive oil
- Salt and pepper to taste
- Cherry tomatoes, halved (for garnish)
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- Blend the basil, parsley, pine nuts, Parmesan, and garlic in a food processor until finely chopped.
- Add olive oil while the processor runs until the mixture is smooth and creamy, seasoning with salt and pepper.
- Toss the cooked pasta in the creamy pesto sauce until well coated.
- Garnish with halved cherry tomatoes before serving.
Notes
This dish is best enjoyed fresh, but leftovers can be stored in the fridge for up to 3 days.
