Description

A creamy and vibrant Green Goddess Pesto Pasta, perfect for a cozy weeknight dinner.


Ingredients

Scale
  • 8 oz pasta of choice
  • 1 cup fresh basil leaves
  • 1/2 cup fresh parsley leaves
  • 1/4 cup pine nuts
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic
  • 1/2 cup olive oil
  • Salt and pepper to taste
  • Cherry tomatoes, halved (for garnish)

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Blend the basil, parsley, pine nuts, Parmesan, and garlic in a food processor until finely chopped.
  3. Add olive oil while the processor runs until the mixture is smooth and creamy, seasoning with salt and pepper.
  4. Toss the cooked pasta in the creamy pesto sauce until well coated.
  5. Garnish with halved cherry tomatoes before serving.

Notes

This dish is best enjoyed fresh, but leftovers can be stored in the fridge for up to 3 days.
