A heartwarming Garlic Herb Butter Roasted Chicken infused with garlic, lemon, and fresh herbs, perfect for family dinners or special occasions.
Ingredients

- 1 whole chicken
- 1/2 cup unsalted butter, softened
- 4 cloves garlic, minced
- 2 lemons, zested and juiced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- Salt and pepper to taste
- 1 onion, quartered
- Fresh herbs for stuffing (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Mix the softened butter with garlic, lemon zest, lemon juice, rosemary, thyme, salt, and pepper until creamy and well-combined.
- Loosen the skin of the chicken carefully, starting at the neck and moving down towards the thighs. Rub the herb butter mixture underneath the skin, and then coat the outside of the chicken with any remaining butter.
- Stuff the cavity of the chicken with the quartered onion and any additional fresh herbs.
- Place the chicken in a roasting pan and pour any remaining butter mixture over the top.
- Roast the chicken for approximately 90 minutes, or until the internal temperature reaches 165°F (75°C), basting occasionally.
- Let the chicken rest for 10 minutes before carving and serving.
Notes
You can prepare the herb butter a day in advance and store it in the fridge.
