- 2 cups vegetable broth
- 2 tablespoons butter
- 4 cloves garlic, minced
- 1 cup mushrooms, sliced
- 2 cups fresh spinach

Instructions
- Bring the vegetable broth to a boil in a pot. Add the orzo and cook according to package instructions until al dente.
- Melt the butter in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the sliced mushrooms and cook until they are golden brown.
- Stir in the cooked orzo and fresh spinach and cook until the spinach wilts.
- Season with salt and pepper to taste.
- Serve hot, garnished with Parmesan cheese if desired.
