Description

Ingredients

  • 1 cup orzo pasta
  • 2 cups vegetable broth
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 2 cups fresh spinach
  • Salt and pepper to taste
  • Parmesan cheese for garnish (optional)

Instructions

  1. Bring the vegetable broth to a boil in a pot. Add the orzo and cook according to package instructions until al dente.
  2. Melt the butter in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the sliced mushrooms and cook until they are golden brown.
