- 1 1/2 – 2 pounds Smart Chicken Organic Chicken Tenderloins, cut into thirds
- Vegetable Oil, for deep frying

- 1/2 tsp Paprika
- 1/2 tsp Garlic Powder
- 1/2 tsp Cayenne Pepper
- 1/2 tsp Black Pepper
- 1 tsp Kosher Salt

- 1 tsp Baking Powder
- 1 1/4 cup Non-Alcoholic Beer (or broth)
- 1 Egg
- 1/2 tsp Paprika
- 1/2 tsp Garlic Powder
- 1/2 tsp Cayenne Pepper
- 1/2 tsp Black Pepper
- 1 tsp Kosher Salt
- 1/4 cup Mayonnaise
- 1/4 cup Buttermilk
- 1/4 cup Sour Cream
- 1 TB Chopped Fresh Parsley
- 1 TB Chopped Fresh Chives
- 2–3 TB Hot Pepper Sauce
- 1 Garlic Clove, grated
- Squeeze of Lemon Juice
- Kosher Salt to taste
Instructions
- Make the Buffalo Ranch Sauce: Whisk together the Buffalo ranch sauce ingredients in a bowl and set aside for the flavors to meld.
- Heat the Oil: In a large pot, heat vegetable oil a few inches deep to a temperature of 375°F. Prepare a large sheet tray lined with a wire rack.
- Prepare the Dredges: In one bowl, whisk together the flour dredge ingredients until well combined. In another bowl, whisk together the beer batter dredge ingredients until smooth.
- Season the Chicken: Lightly season the chicken tender pieces with kosher salt.
- Dredge the Chicken: First, dredge the chicken in the flour mixture, shaking off any excess. Next, dip it into the beer batter, allowing the excess to drip off, then return it to the flour, coating it again.
- Fry the Chicken: Carefully fry the chicken in batches in the hot oil until golden brown and crispy, about 5 minutes, maintaining the oil temperature between 350°F and 375°F.
- Drain: Transfer the fried chicken to the wire rack and immediately season with kosher salt and a sprinkle of cayenne pepper for an extra kick.
- Serve: Enjoy your tender bites with the creamy Buffalo ranch dipping sauce on the side, ready for dipping!
Notes
You can prepare the chicken and store it in the freezer before frying for a quick meal later on. Keep a close eye on the oil temperature to prevent burning.
