- 8 oz pasta (such as rotini or penne)
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup black olives, sliced
- 1/2 cup mozzarella balls, halved
- 1/4 cup red onion, diced
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions
- Begin by cooking the pasta according to the package instructions. Once done, drain the pasta and rinse it under cold water.
- In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, black olives, mozzarella, and red onion.
- In a separate small bowl, whisk together the olive oil, red wine vinegar, Italian seasoning, and salt and pepper.
- Pour the dressing over the pasta salad, and toss gently to coat.
- Allow your creation to chill in the refrigerator for at least 30 minutes before serving.
- Just before serving, garnish with fresh basil leaves.
Notes
This pasta salad tastes even better the next day, so consider making it ahead of time.
