Description

A vibrant and refreshing pasta salad with cherry tomatoes, olives, and mozzarella, perfect for warm weather gatherings.


Ingredients

  • 8 oz pasta (such as rotini or penne)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup black olives, sliced
  • 1/2 cup mozzarella balls, halved
  • 1/4 cup red onion, diced
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. Begin by cooking the pasta according to the package instructions. Once done, drain the pasta and rinse it under cold water.
  2. In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, black olives, mozzarella, and red onion.
  3. In a separate small bowl, whisk together the olive oil, red wine vinegar, Italian seasoning, and salt and pepper.
  4. Pour the dressing over the pasta salad, and toss gently to coat.
  5. Allow your creation to chill in the refrigerator for at least 30 minutes before serving.
  6. Just before serving, garnish with fresh basil leaves.

Notes

This pasta salad tastes even better the next day, so consider making it ahead of time.
