Description

A cozy and comforting soup perfect for chilly nights, loaded with ham, beans, and vibrant vegetables.


Ingredients

  • 2 cups cooked ham, diced
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Sauté the chopped onion, diced carrots, and celery over medium heat until tender, about 5 minutes.
  2. Add the diced ham and cook for an additional couple of minutes.
  3. Stir in the white beans, chicken broth, dried thyme, salt, and pepper, and bring to a gentle boil.
  4. Reduce the heat and let the soup simmer for about 20-30 minutes.
  5. Serve hot in bowls, and enjoy!
