- 2 cups cooked ham, diced
- 1 can (15 oz) white beans, drained and rinsed
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups chicken broth
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Sauté the chopped onion, diced carrots, and celery over medium heat until tender, about 5 minutes.
- Add the diced ham and cook for an additional couple of minutes.
- Stir in the white beans, chicken broth, dried thyme, salt, and pepper, and bring to a gentle boil.
- Reduce the heat and let the soup simmer for about 20-30 minutes.
- Serve hot in bowls, and enjoy!
