A quick and comforting Easy Fried Rice recipe perfect for busy weeknights, making use of leftover rice and veggies.
Ingredients

- 2 eggs
- 3 cups leftover rice
- 2–3 tablespoons soy sauce
- 1 cup mixed vegetables (like peas and carrots)
- 2 green onions, chopped
- 2 tablespoons cooking oil (vegetable or olive oil)
Instructions
- Heat the oil in a skillet over medium heat until it’s glistening but not smoking.
- Crack the eggs into the skillet and scramble until fully cooked. Remove the eggs and set aside.
- In the same skillet, add extra oil if needed and stir-fry the leftover rice until heated through.
- Pour in the soy sauce and add the mixed vegetables and scrambled eggs back to the skillet.
- Stir everything together for an additional 2-3 minutes until heated and well combined.
- Garnish with chopped green onions before serving.
Notes
Use cold leftover rice for best results, and feel free to customize with your favorite ingredients.
