- 1 cup Orzo pasta
- 5 ounces Boursin cheese
- 2 cups Chicken (cooked and diced)
- 1 cup Mixed vegetables (e.g., bell peppers, spinach, zucchini)
- 2 tablespoons Olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Cook the orzo according to package instructions until al dente. Drain and set aside.
- Add a drizzle of olive oil to the skillet and sauté your choice of vegetables until soft, about 4-5 minutes.
- Stir in the cooked orzo, Boursin cheese, and diced chicken. Mix until the cheese is melted and everything is well combined.
- Season with salt and pepper to taste.
- Spread the mixture evenly in the skillet and bake for 15-20 minutes, or until heated through and slightly golden on top.
