- 2 medium zucchinis, grated

- 1/2 cup cornmeal
- 1/4 cup grated Parmesan cheese (optional for vegan)
- 2 large eggs (or flax eggs for vegan)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Olive oil for baking or frying
Instructions
- Preheat your oven to 400°F (200°C) if you plan to bake your fritters. Line a baking sheet with parchment paper.
- Combine the grated zucchini, flour, cornmeal, Parmesan cheese (if using), eggs, garlic powder, onion powder, salt, and pepper in a large bowl. Mix until well combined.
- Scoop tablespoons of the mixture onto the prepared baking sheet, flattening them slightly. Drizzle with olive oil.
- Bake for about 20-25 minutes, flipping halfway through, until golden and crispy.
- Serve warm with your favorite dip or sauce.
Notes
Drain excess moisture from zucchini for crispier fritters. Can be made ahead and stored for later.
