Description

Transform zucchini into crispy, golden fritters that are perfect for an easy dinner or savory snack.


Ingredients

  • 2 medium zucchinis, grated
  • 1 cup all-purpose flour (or gluten-free flour if desired)
  • 1/2 cup cornmeal
  • 1/4 cup grated Parmesan cheese (optional for vegan)
  • 2 large eggs (or flax eggs for vegan)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Olive oil for baking or frying

Instructions

  1. Preheat your oven to 400°F (200°C) if you plan to bake your fritters. Line a baking sheet with parchment paper.
  2. Combine the grated zucchini, flour, cornmeal, Parmesan cheese (if using), eggs, garlic powder, onion powder, salt, and pepper in a large bowl. Mix until well combined.
  3. Scoop tablespoons of the mixture onto the prepared baking sheet, flattening them slightly. Drizzle with olive oil.
  4. Bake for about 20-25 minutes, flipping halfway through, until golden and crispy.
  5. Serve warm with your favorite dip or sauce.

Notes

Drain excess moisture from zucchini for crispier fritters. Can be made ahead and stored for later.
