- 4 salmon fillets
- 2 cups fresh spinach
- 1/2 cup sun-dried tomatoes
- 1/2 cup heavy cream
- 3 cloves garlic, minced
- 2 tablespoons butter
- Salt and pepper to taste
- Parmesan cheese for garnish
- Fresh basil for garnish
Instructions
- Melt the butter over medium heat in a skillet. Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the sun-dried tomatoes to the skillet and cook for another 2-3 minutes, stirring occasionally.
- Push the garlic and tomatoes to the side of the pan and add the salmon fillets. Season with salt and pepper. Cook for about 4-5 minutes on each side or until cooked through.
- Remove the salmon from the pan and set aside on a plate to rest.
- Add the fresh spinach to the same skillet and sauté until wilted, about 2 minutes.
- Pour in the heavy cream, stirring gently to combine and bring to a simmer.
- Return the salmon to the pan, allowing it to heat through in the sauce for 1-2 minutes.
- Serve hot, garnished with Parmesan cheese and fresh basil.
Notes
You can prepare the creamy sauce ahead of time and store it in the fridge. Gently reheat and add the salmon before serving.
