Description

A comforting and creamy white chicken chili made effortlessly in a crockpot, perfect for busy weeknights.


Ingredients

  • 1 lb boneless skinless chicken breasts
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 green bell pepper, diced
  • 2 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon oregano
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Chopped cilantro and lime for garnish

Instructions

  1. Combine the chicken, white beans, corn, diced tomatoes, onion, garlic, green bell pepper, chicken broth, cumin, chili powder, oregano, salt, and pepper in a crockpot.
  2. Stir to mix all ingredients together, making sure everything is well combined.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours, allowing the flavors to come together beautifully.
  4. Remove the chicken about 30 minutes before serving and shred it, then return it to the pot.
  5. Stir in the heavy cream and cook until heated through.
  6. Serve garnished with chopped cilantro and a squeeze of lime.
