- 1 lb boneless skinless chicken breasts
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (14.5 oz) diced tomatoes with green chilies
- 1 onion, diced
- 3 cloves garlic, minced
- 1 green bell pepper, diced
- 2 cups chicken broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon oregano
- 1 cup heavy cream
- Salt and pepper to taste
- Chopped cilantro and lime for garnish
Instructions
- Combine the chicken, white beans, corn, diced tomatoes, onion, garlic, green bell pepper, chicken broth, cumin, chili powder, oregano, salt, and pepper in a crockpot.
- Stir to mix all ingredients together, making sure everything is well combined.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, allowing the flavors to come together beautifully.
- Remove the chicken about 30 minutes before serving and shred it, then return it to the pot.
- Stir in the heavy cream and cook until heated through.
- Serve garnished with chopped cilantro and a squeeze of lime.
