- 1 package of gnocchi
- 1 medium butternut squash, peeled and diced
- 1 pound Italian sausage, casings removed
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 teaspoon fresh thyme, chopped
- 1 teaspoon fresh sage, chopped
- Salt and pepper to taste
- Olive oil
Instructions
- Heat olive oil in a large pan over medium heat. Add the diced onion and cook until translucent.
- Add the Italian sausage, breaking it apart with a spatula, and cook until browned.
- Stir in the garlic and cook for an additional minute, until fragrant.
- Mix in the diced butternut squash and season with salt and pepper. Cover and cook until the squash is tender, about 10 minutes.
- Meanwhile, cook the gnocchi according to package instructions.
- Pour in the heavy cream, thyme, and sage once the squash is tender. Stir to combine and let simmer for a few minutes, allowing the sauce to thicken.
- Drain the gnocchi and add it to the skillet. Toss everything together gently until coated in the creamy sauce.
- Serve hot, garnished with additional sage if desired.
Notes
For variations, add fresh spinach or cheese, or substitute butternut squash with pumpkin for a different flavor.
