- 1 lb chicken breast, diced
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup onion, chopped
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup frozen peas
- 1 tsp thyme
- 1 tsp garlic powder
- Salt and pepper to taste
- Biscuits for serving
Instructions
- Combine the diced chicken, carrots, celery, onion, and chicken broth in a large pot or crock pot.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 20-30 minutes until the chicken is thoroughly cooked.
- If using a crock pot, cover it and cook on low for 6-8 hours.
- Stir in the heavy cream, frozen peas, thyme, garlic powder, salt, and pepper.
- Cook for an additional 10 minutes until everything is heated through.
- Serve hot with freshly baked biscuits on the side.
Notes
This soup can be made ahead and stored in the refrigerator for up to 3 days. Leftovers can be frozen for up to 2 months.
