Description

A warm, creamy soup rich with tender chicken and fresh vegetables, perfect for cozy evenings.


Ingredients

  • 1 lb chicken breast, diced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onion, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup frozen peas
  • 1 tsp thyme
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Biscuits for serving

Instructions

  1. Combine the diced chicken, carrots, celery, onion, and chicken broth in a large pot or crock pot.
  2. Bring the mixture to a boil, then reduce the heat and let it simmer for 20-30 minutes until the chicken is thoroughly cooked.
  3. If using a crock pot, cover it and cook on low for 6-8 hours.
  4. Stir in the heavy cream, frozen peas, thyme, garlic powder, salt, and pepper.
  5. Cook for an additional 10 minutes until everything is heated through.
  6. Serve hot with freshly baked biscuits on the side.

Notes

This soup can be made ahead and stored in the refrigerator for up to 3 days. Leftovers can be frozen for up to 2 months.
