Instructions
- Heat the olive oil in a large skillet over medium heat.
- Place the chicken thighs in the skillet and brown on both sides.
- Remove the chicken thighs and set aside.
- Add the chopped onion to the skillet, sautéing until translucent.
- Pour in the apple cider and bring to a gentle simmer.
- Return the chicken thighs to the skillet, cover, and reduce heat.
- Braise for about 30 minutes until cooked through and tender.
- Stir in the heavy cream until blended with the apple cider.
- Caramelize apple slices over medium heat until soft and golden.
- Serve chicken hot, topped with sauce and caramelized apples, garnished with thyme.
