Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the pumpkin puree, sugar, brown sugar, and softened butter until smooth and fluffy.
- Beat in the egg and vanilla extract until well incorporated and creamy.
- Whisk together the flour, baking soda, baking powder, pumpkin spice, and salt in a separate bowl.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix!
- Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
- Sprinkle coarse sugar on top of each dough ball.
- Bake for 12-15 minutes or until the edges are golden brown.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to wire racks to cool completely.
