- 1 cup barley
- 4 cups beef broth
- 2 cups water

- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- Heat a drizzle of olive oil in a large pot over medium heat.
- Add the chopped onion, carrots, and celery; sauté until softened, about 5 to 7 minutes.
- Stir in the minced garlic and cook for an additional minute.
- Toss in the beef stew meat and let it brown on all sides.
- Pour in the beef broth and water, stirring everything together.
- Stir in the barley and dried thyme, then bring to a boil.
- Once boiling, reduce heat and let simmer for about one hour until cooked and tender.
- Season with salt and pepper to taste. Serve hot.
