A delightful grilled cheese sandwich combining creamy brie, sweet apples, and honey, perfect for quick meals on cool autumn days.

- 2 slices sourdough bread
- 2 tablespoons salted butter
- ¼ ounce brie cheese (remove the rind)
- 2 tablespoons honey
- ½ large green apple (cored and thinly sliced)
- 1 handful fresh rosemary for garnish (optional)
Instructions
- Spread butter generously on one side of each slice of bread. Flip the bread over so the buttered side is facing down.
- Remove the rind from the brie and spread it across the unbuttered side of one slice of bread.
- Spread honey evenly over the brie, creating a sweet base.
- Slice half of the apple thinly and spread the apple slices evenly across the honey.
- Place the second slice of bread on top, buttered side facing up.
- Heat a frying pan fitted with a lid over medium heat, then place the sandwich in the center. Cook for 2-3 minutes, covered, until golden brown.
- Flip the sandwich, replace the lid, and cook for another 2-3 minutes until both sides are golden brown and the cheese is melted.
- Slice in half, garnish with fresh rosemary if desired, and enjoy hot.
Notes
Best enjoyed fresh, but can be prepped in advance. Store leftovers in an airtight container in the fridge for up to a day.
