Description

A comforting and zesty meal featuring tender chicken, bowtie pasta, and broccoli coated in rich cowboy butter and fresh lemon.


Ingredients

  • 8 oz bowtie pasta
  • 2 chicken breasts, diced
  • 2 cups broccoli florets
  • 1/4 cup cowboy butter (or garlic herb butter)
  • 1 lemon, zested and juiced
  • Salt and pepper to taste
  • Parmesan cheese for serving

Instructions

  1. Cook the bowtie pasta according to package instructions, adding the broccoli during the last 3 minutes of cooking. Drain and set aside.
  2. Melt the cowboy butter in a large skillet over medium heat. Add the diced chicken and season generously with salt and pepper. Cook until the chicken is golden brown and cooked through, about 6-8 minutes.
  3. Add the cooked pasta and broccoli to the skillet with the chicken. Pour in the lemon juice and zest, tossing everything to combine.
  4. Cook for an additional 2-3 minutes until everything is heated through.
  5. Serve hot, finished with a sprinkle of Parmesan cheese on top.

Notes

Make ahead option available. Use frozen broccoli for convenience. Store leftovers in an airtight container in the fridge for 3-4 days.
