- 8 oz bowtie pasta
- 2 chicken breasts, diced
- 2 cups broccoli florets
- 1/4 cup cowboy butter (or garlic herb butter)
- 1 lemon, zested and juiced
- Salt and pepper to taste
- Parmesan cheese for serving
Instructions
- Cook the bowtie pasta according to package instructions, adding the broccoli during the last 3 minutes of cooking. Drain and set aside.
- Melt the cowboy butter in a large skillet over medium heat. Add the diced chicken and season generously with salt and pepper. Cook until the chicken is golden brown and cooked through, about 6-8 minutes.
- Add the cooked pasta and broccoli to the skillet with the chicken. Pour in the lemon juice and zest, tossing everything to combine.
- Cook for an additional 2-3 minutes until everything is heated through.
- Serve hot, finished with a sprinkle of Parmesan cheese on top.
