Ingredients

  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 cup shredded cheese (mozzarella or cheddar)
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds, creating a lovely shell.
  3. In a skillet over medium heat, add a drizzle of olive oil and sauté the chopped onion and minced garlic until translucent and fragrant.
  4. Add the ground beef to the skillet, breaking it up as it cooks until browned and crumbly.
  5. Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper, mixing thoroughly until combined.
  6. Spoon the beef and rice mixture into each bell pepper, packing it down a bit.
  7. Place the stuffed peppers upright in a baking dish and sprinkle with shredded cheese, allowing it to melt.
  8. Cover the dish with foil and bake for 25-30 minutes.
  9. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
